About Ndunderi:

Ndunderi is a type of pasta that comes from the Campania region of Italy, particularly associated with the town of Minori on the Amalfi Coast. It’s an ancient dish, often considered one of the oldest forms of pasta. Ndunderi are similar to gnocchi but are made primarily with ricotta cheese, flour and eggs. This results in a lighter, more delicate dumpling compared to the often potato-based gnocchi found elsewhere.
Ndunderi is celebrated for its rich history and cultural significance in Campania and is protected as a traditional dish. It’s a testament to the Italian culinary tradition of using simple, high-quality ingredients to create dishes that are much greater than the sum of their parts.
